Spotlight on Fortification

Fortification is the practice of adding nutrients, e.g., certain vitamins and minerals, to a food to enhance its nutritional quality, and, ultimately, to deliver a public health benefit. Ready-to-eat breakfast cereals are often fortified with B-vitamins and iron, increasingly so with vitamin D and sometimes with calcium.
